Description

In this recipe, large beets are peeled or left unpeeled according to preference, then spiralized into long, thin strands. The beets are roasted at 400°F for 10 to 13 minutes until soft but retaining structure. The dressing combines balsamic vinegar, honey, Dijon mustard, olive oil, sea salt, and freshly ground black pepper whisked into a smooth vinaigrette.

The caramelized edges formed during roasting contrast with the beets’ natural earthiness, while the vinaigrette adds brightness and subtle sweetness. The spiralized texture offers a visually appealing and delicate bite rather than thick chunks or slices.

  • 2 beets washed and peeled (peeling is optional; it looks nicer peeled but the peel also has a lot of nutrition, large
  • 1/2 teaspoon salt sea salt
  • 1/4 teaspoon black pepper freshly ground
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar dark
  • 2-3 teaspoons honey
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat the oven to 400 degrees F. Make the vinaigrette: Place the ingredients in a small bowl and whisk until emulsified. Slice the beets using a spiralizer. We use and recommend the Paderno World Spiralizer. Spread the beets out on a lined cookie sheet. Drizzle with a little olive oil and sprinkle with the salt and pepper.  Roast the beets for 10-13 minutes or until the beets are soft.
  2. Place the beets in a large bowl and pour over the vinaigrette. Stir to evenly coat the beets. Serve immediately while warm or serve at room temperature.
