Ingredients

  • 3 sweet potato peeled and cut into bite-size cubes
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp brown sugar more if you want it sweeter
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg ground
  • Pinch ground ginger
  • salt to taste, sea salt

Instructions

  1. Preheat the oven to 350 degrees. Coat a large baking dish with cooking spray.
  2. Peel and dice the sweet potatoes into bite-size cubes and place them in the baking dish.
  3. Melt butter in the microwave and pour over the potatoes along with the olive oil, brown sugar, cinnamon, nutmeg, ginger, and salt. Add more sugar or cinnamon if desired. Toss to coat evenly.
  4. Bake in the oven for 50-60 minutes, or until golden brown and tender, stirring the sweet potatoes once or twice during roasting. Enjoy.
