Ingredients

  • 4 cups sweet potato (peeled and chopped)
  • 1 sweet onion (cut into wedges)
  • 2 cloves garlic (sliced large)
  • 3 Tablespoons olive oil
  • 1 pinch salt (to taste)
  • 1 pinch black pepper to taste, ground
  • 1 tablespoon balsamic vinegar (Optional)

Instructions

  1. Preheat the oven to 425 degrees °
  2. In a medium large bowl mix the sweet potatoes, onion, and garlic.
  3. Drizzle olive oil over the mixture and toss it well to coat; pour into a shallow roasting pan.
  4. Roast the sweet potatoes in the oven for 30-35 minutes turning every 7-10 minutes so all sides are browning and the vegetables are soft.
  5. Season with salt and pepper to taste.
  6. For added tang try sprinkling balsamic vinegar over the vegetables.
  7. Serve warm.
