Roasted Sweet Potatoes
Description
Roasted Sweet Potatoes feature evenly chopped pieces seasoned with salt, pepper, and oil, then baked to a tender interior with lightly crisp edges. The cooking process involves spreading them in a single layer to avoid steaming, enhancing caramelization and texture. Optional additions like cinnamon impart warmth, while chili powder or cayenne introduce a spicy twist, allowing for flavor variation. This straightforward method yields a hearty vegetable side with a balance of softness inside and slight crispness outside.
The dish can complement a variety of meals, offering both sweet and mildly spicy options based on seasoning choices. Served warm, it pairs well with proteins and other roasted vegetables. The flexibility to adjust seasonings makes it suitable for different palates and occasions.
For best results, cut the sweet potatoes uniformly to ensure even cooking, spread them without overcrowding on the pan to maintain crispiness, and consider increasing oven temperature briefly at the end for extra crispness while watching carefully to avoid burning. Leftovers can be refrigerated up to one week.
Ingredients
- 2 medium sweet potato peeled and chopped into even chunks
- 1 - 2 Tablespoons avocado oil or olive oil
- ½ teaspoon salt sea salt
- ¼ teaspoon black pepper ground
- cinnamon chili powder, cayenne pepper, optional seasoning
Instructions
- Preheat oven to 400°F. Chop sweet potatoes into medium-sized chunks. Not too small, but not too big either. Try to make them around the same size so that they are all done cooking at the same time.
- Place sweet potatoes, oil, salt and pepper in a large bowl and toss to combine. Pour onto a baking sheet and cook for 30-45 minutes, until fork tender, tossing once half-way through. Remove from oven, taste and season with additional salt if needed. Serve warm or store leftovers in the fridge for up to 1 week.
Notes
- Cut sweet potatoes into uniform chunks to ensure even cooking.
- Spread pieces in a single layer to avoid steaming and achieve crispy edges.
- Try adding cinnamon for a sweeter flavor or chili powder/cayenne for a spicy kick.
- To make them extra crispy, increase the oven temperature to 450ºF for the last 5 minutes, watching closely to prevent burning.
- Store leftovers in the refrigerator and consume within one week.
