Roasted Sweet Potatoes and Bacon

Roasted Sweet Potatoes and Bacon features sliced sweet potatoes and a halved garlic head roasted together with olive oil, maple syrup, salt, and black pepper. Crispy bacon pieces are added midway to finish cooking. The result is tender sweet potatoes with a caramelized maple glaze and savory, crisp bacon highlights, making a flavorful side dish.

Description

This recipe for Roasted Sweet Potatoes and Bacon begins by slicing unpeeled sweet potatoes thickly and halving a whole garlic head horizontally. The vegetables are tossed with olive oil, maple syrup, salt, and freshly ground black pepper for balanced sweetness and seasoning.

They are arranged cut-side-up with the garlic on a baking sheet and roasted at 400°F, initially cooking for 20 minutes until soft. Then the roasting pan is removed briefly to stir the sweet potatoes and to scatter chopped bacon evenly on top. The dish returns to the oven for an additional 25 to 30 minutes, during which the bacon crisps and the sweet potatoes finish roasting to tender, caramelized perfection.

This dish pairs well as a savory side for breakfast, brunch, or dinner. The combination of smoky bacon, sweet roasted potatoes, and mellow roasted garlic creates a complex flavor and pleasing textures that complement many main dishes.
