Roasted Tomato Bolognese Sauce
Description
The Roasted Tomato Bolognese Sauce starts by roasting thick slices of beefsteak tomatoes alongside peeled garlic cloves, seasoned lightly with olive oil, salt, pepper, and basil. This roasting process concentrates the tomato flavor and softens the ingredients. Meanwhile, ground beef is browned with diced onions and seasoned with bay leaves, basil, Italian seasoning, salt, and pepper to build a savory meat base.
After roasting, the tomatoes and garlic are pulsed until mostly smooth and added to the meat mixture along with tomato sauce and sugar. The entire sauce is simmered gently for four hours, allowing rich flavors to develop and the meat to tenderize thoroughly. This slow cooking results in a sauce with a thick, harmonious flavor and tender texture.
This sauce pairs well with al dente pasta such as spaghetti, offering a satisfying meal with classic Italian-inspired flavors. The balance of roasted tomato sweetness, garlic depth, and well-seasoned meat makes it suitable for a variety of pasta dishes.
Ingredients
- 6 beefsteak tomato
- 6 cloves garlic peeled
- 2 tablespoons olive oil
- salt
- black pepper
- 1 teaspoon basil dried
- 2 tablespoons olive oil
- 1 lb. ground beef 90/10
- 1 medium onion diced
- 2 bay leaf
- 1 teaspoon basil dried
- 1 heaping teaspoon Italian seasoning
- salt to taste
- black pepper to taste
- 1 oz. can tomato sauce
- 1 1/2-2 tablespoons sugar
- 1 lb. spaghetti
Instructions
- Preheat oven to 400 degrees. Lightly spray baking sheet with nonstick cooking spray and set aside. Wash tomatoes and slice into thick slices. Place onto baking sheet with peeled cloves of garlic and drizzle with olive oil. Sprinkle with salt, pepper and basil. Bake 30-35 minutes or until shrively-ish.
- While tomatoes and garlic are baking, heat olive oil in large pot and brown ground beef and onions together. Add in bay leaves, basil, italian seasoning, salt and pepper and stir. Reduce heat to low until tomatoes are done cooking.
- Once tomatoes and garlic are finished cooking, spoon into a food processor or blender and pulse until mostly smooth {a few chunks are fine}. Pour tomato sauce into meat along with the can of tomato sauce and the sugar. Stir and bring to boil, then reduce to a low simmer and cook 4 hours, stirring occasionally. Taste and adjust seasonings accordingly. {I had to add in more salt}
- Serve on al dente pasta, such as spaghetti.
