Roasted Tomatoes
Description
This recipe involves cutting ripe tomatoes into halves or quarters depending on size, then tossing them evenly with olive oil, balsamic vinegar, minced garlic, fresh or dried basil, salt, and black pepper. The seasoned tomatoes are spread in a rimmed baking dish or pan and roasted at 450°F until they reach the desired doneness, which varies by tomato type and size.
Roasting enhances the natural sweetness and concentration of flavors in the tomatoes while softening their flesh. Larger or firmer tomatoes like Romas need longer roasting times around 20 minutes, while smaller juicy tomatoes like Campari require closer to 10 minutes. The finished tomatoes can be served hot or at room temperature as a side dish, tossed with pasta, or incorporated into sauces and spreads.
Adding shredded Parmesan cheese is optional and offers a salty, nutty contrast. Roasted tomatoes also offer a simple way to enjoy seasonal produce with minimal effort.
