Roasted Turkey Tostadas with Avocado Spinach Sauce

Roasted Turkey Tostadas are a favorite in my home. This quick and easy Mexican meal is fun to customize with different toppings to make them even healthier, more colorful, and beautiful.

Ingredients

Servings

Roasted Turkey Breast Tenderloins:

  • 2 tablespoons olive oil
  • ½ teaspoon lemon pepper
  • ½ teaspoon oregano dried
  • ½ teaspoon chili powder
  • turkey breast tenderloins 100 - 150 g per serving, Honeysuckle White brand
  • kosher salt
  • lemon optional, slices

Avocado Spinach Sauce:

  • 2 avocado ripe
  • spinach baby, handful
  • cilantro handful
  • 1/2 cup sour cream reduced-fat
  • 1 jalapeno pepper or 2 jalapenos
  • 1 garlic clove
  • 1/2 teaspoon salt

Tostadas and Toppings:

  • 6 tostada flats 1 per person/per serving, pre-packaged
  • refried black beans
  • tomato chopped
  • lettuce shredded
  • sweet potatoes roasted
  • pomegranate seeds

Instructions

Roasted Turkey Breast Tenderloin:

  1. Preheat oven 375 degrees F.
  2. In a small bowl combine lemon pepper, oregano, and chili powder.
  3. Drizzle each turkey tenderloin with one tablespoon of olive oil and then season generously with spice mixture and salt.
  4. Arrange the seasoned turkey tenderloin on an aluminum foil-lined baking sheet with place lemon slices, if using.
  5. Roast for 40 minutes lightly covered with aluminum foil.
  6. Roast for an additional 15 to 20 minutes uncovered until the center of the turkey tenderloins reaches at least 165 degrees.
  7. Allow the turkey tenderloins to rest for 10 minutes. Use a sharp knife to slice and chop the tenderloins into 1/2-inch cubes.

Avocado Spinach Sauce:

  1. Puree spinach, cilantro, avocado, sour cream, jalapeño, garlic, and salt, in a blender or food processor until smooth.

Notes

  •  If you want to forego making the avocado sauce you can also top your tostadas with refried black beans for a quick and delicious alternative.
