  • 4 sweet potato scrubbed clean and cubed, white variety
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 2 teaspoons thyme fresh leaves
  • 2 teaspoons cinnamon or pumpkin pie spice
  • kosher salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 350 degrees and line a rimmed baking sheet with parchment paper or a Silpat liner, set aside.
  2. In a large bowl add cubed sweet potatoes and add in honey, olive oil, fresh thyme leaves, pumpkin pie spice, kosher salt, and black pepper.
  3. Stir to combine.
  4. Add to your prepared rimming baking sheet and roast for 25-30 minutes.
  5. Every 10 minutes stir the potatoes so they don't burn. Careful while turning the potatoes that you do not break them.
  6. Serve hot.
