Description

The Rocket Salad balances the sharp, peppery bite of arugula with the crispness of radishes and the creamy nuttiness from Parmesan cheese and pine nuts.   • 120 g arugula aka rocket
  • 2 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • 1 lemon (juice only)
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 2 radish finely sliced
  • 50 g pine nuts
  • 30 g parmesan shavings

Instructions

  1. In a small mixing bowl, combine 2 tablespoon Olive oil, 2 tablespoon Balsamic vinegar, juice of 1 Lemon and 1 pinch Sea salt and ground black pepper.
  2. Put 120 g Rocket (arugula) and 2 Radishes into a large mixing bowl.
  3. Pour over the dressing.
  4. Add 50 g Pine nuts and 30 g Parmesan shavings.
  5. Mix well and serve. Add more Parmesan to finish off (optional).

Notes

  • To add extra texture and flavor, toast pine nuts lightly in a dry pan before adding to the salad.
  • Freshly grate the Parmesan cheese for better flavor and texture rather than pre-shaved or pre-grated options.
  • Add the dressing last minute to prevent the rocket from becoming soggy and maintain crispness.
  • If a bit of heat is desired, sprinkle red chili flakes over the finished salad.
  • For a vegetarian version, substitute Parmesan with a hard cheese that does not contain animal rennet.
