Description
The Rocket Salad balances the sharp, peppery bite of arugula with the crispness of radishes and the creamy nuttiness from Parmesan cheese and pine nuts. The dressing, composed of olive oil, balsamic vinegar, and fresh lemon juice, adds acidity and depth, enhancing the freshness of the greens. Combining these ingredients just before serving helps keep the salad crisp and prevents sogginess.
The optional step of toasting pine nuts elevates their crunch and adds a warm, nutty note. Freshly grating Parmesan heightens the cheese’s savory elements. This salad suits as a light starter, side dish, or a quick refreshing lunch, especially when garnished with extra cheese or a pinch of chili flakes for heat.
For vegetarians, note that Parmesan is made with animal rennet and may not fit all diets; it can be replaced with a vegetarian-friendly hard cheese when needed.
Ingredients
- 120 g arugula aka rocket
- 2 tablespoon olive oil
- 2 tablespoon balsamic vinegar
- 1 lemon (juice only)
- 1 pinch sea salt
- 1 pinch black pepper
- 2 radish finely sliced
- 50 g pine nuts
- 30 g parmesan shavings
Instructions
- In a small mixing bowl, combine 2 tablespoon Olive oil, 2 tablespoon Balsamic vinegar, juice of 1 Lemon and 1 pinch Sea salt and ground black pepper.
- Put 120 g Rocket (arugula) and 2 Radishes into a large mixing bowl.
- Pour over the dressing.
- Add 50 g Pine nuts and 30 g Parmesan shavings.
- Mix well and serve. Add more Parmesan to finish off (optional).
Notes
- To add extra texture and flavor, toast pine nuts lightly in a dry pan before adding to the salad.
- Freshly grate the Parmesan cheese for better flavor and texture rather than pre-shaved or pre-grated options.
- Add the dressing last minute to prevent the rocket from becoming soggy and maintain crispness.
- If a bit of heat is desired, sprinkle red chili flakes over the finished salad.
- For a vegetarian version, substitute Parmesan with a hard cheese that does not contain animal rennet.
