Romesco dip

Romesco dip blends roasted peppers, sun-dried tomatoes, toasted flaked almonds, garlic, and spices into a rich and textured sauce with olive oil and sherry vinegar. This Spanish-inspired dip offers a smoky, slightly spicy flavor accented by smoked paprika and cayenne. It works well as a versatile condiment or spread for bread, vegetables, or grilled dishes.

Description

The Romesco dip starts by toasting flaked almonds until fragrant and lightly browned, enhancing their nutty flavor. Roasted peppers from a jar combined with sun-dried tomatoes, garlic cloves, sherry vinegar, smoked paprika, cayenne, salt, and black pepper are processed together into a coarse sauce. Olive oil is then slowly incorporated while blending to achieve the desired consistency, resulting in a creamy yet textured dip.

This dip balances smoky, tangy, and spicy notes with the natural sweetness from peppers and sun-dried tomatoes and richness from olive oil and almonds. The parsley adds freshness, rounding out the flavor profile. The texture is thick but spreadable, ideal for serving alongside bread or using as a condiment with grilled vegetables or meats.

Romesco can be stored in a jar or bowl and refrigerated to allow flavors to meld further. The use of jarred roasted peppers and sun-dried tomatoes provides convenience without sacrificing depth of flavor. The inclusion of smoked paprika and cayenne introduces a gentle smoky heat, while sherry vinegar contributes brightness and acidity.
