Rosemary Air Fryer Potato Wedges

These Rosemary Air Fryer Potato Wedges feature russet potatoes cut into wedges, soaked to remove starch, then tossed with olive oil, rosemary, garlic powder, parsley, seasoned salt, and Parmesan cheese before air frying until crisp. The result is a fragrant, crunchy exterior with a tender interior.

Description

This recipe begins with scrubbing whole small russet potatoes, then cutting them into wedge shapes suitable for even cooking. Soaking the wedges in cold water for 20-30 minutes removes excess surface starch, which helps achieve a crisper texture once cooked. After drying thoroughly, the wedges are coated with olive oil, fresh and dried rosemary, garlic powder, parsley, and seasoned salt to infuse herbal and savory flavors. They are air fried at 390°F in batches to prevent overcrowding, cooking for about 25-27 minutes total with periodic tossing to ensure even crispness. Parmesan cheese is added at the end for a nutty, salty finish. This method produces wedges with a satisfying contrast of crispy browned edges and a soft interior, along with the aromatic notes of rosemary and garlic.

  • 3 tablespoons olive oil or as needed
  • 1 tablespoon rosemary 1 teaspoon crushed dried rosemary, chopped, fresh
  • 1 teaspoon garlic powder
  • 1 teaspoon parsley chopped, fresh
  • ½ teaspoon seasoned salt
  • 1 tablespoon Parmesan Cheese for garnish, shredded

  6. Toss with parmesan cheese and additional salt if desired.

Notes

  • Soaking potatoes in cold water before cooking reduces surface starch for crispier wedges.
  • Make sure to dry potatoes thoroughly to avoid steaming instead of frying in the air fryer.
  • Cook in single layers without overcrowding for even crisping; use multiple batches if needed.
  • To reheat, air fry leftovers briefly to restore crispiness.
