Rosemary Greyhound Cocktail (made in batch)
Description
The Rosemary Greyhound Cocktail is made by first creating a rosemary simple syrup: sugar dissolved in heated water, then steeped with a rosemary sprig. This syrup imparts subtle herbal flavors to the drink. Combined with vodka and fresh grapefruit juice in a pitcher, the mix is chilled before serving over crushed ice.
The cocktail balances grapefruit's bright citrus tartness with the mildly sweet and aromatic rosemary syrup, while vodka adds a clean spirit base. Optionally adding seltzer water just before serving introduces a gentle fizz. Garnishes with grapefruit slices and rosemary sprigs provide visual appeal and reinforce the herbal-citrus theme.
This recipe can be easily scaled down to single servings or adapted to non-alcoholic versions by substituting seltzer for vodka. A salted rim transforms it into a "salty dog" variant. It is ideal for batch preparation in gatherings where a refreshing, citrus-herb cocktail is desired.
Ingredients
- 1/2 cup water
- 1/2 cup sugar
- 1 rosemary sprig
- 2 cups vodka or gin
- 4 cups grapefruit juice
- ice for serving, crushed
- seltzer water optional
- rosemary for garnish (optional, sprigs|slices
- grapefruit for garnish (optional, sprigs|slices
Instructions
- To make the rosemary simple syrup, heat the water (1/2 cup) and sugar (1/2 cup) together in a small pot. Don't bring it to a boil- just heat until the sugar is completely dissolved. Remove from heat and add the rosemary sprig. Allow to steep for 20 minutes to an hour. Remove rosemary stem and discard.
- Combine the rosemary simple syrup, vodka (2 cups), and grapefruit juice (4 cups) in a pitcher. Stir together and chill.
- Before serving, stir together one more time. Serve over crushed ice in old fashioned glasses and garnish with fresh grapefruit slices and rosemary sprigs, if desired. Top with a little bit of seltzer water for some fizz, if desired.
Notes
- To make a "salty dog," rim glasses with salt before serving.
- For a non-alcoholic version, substitute vodka with seltzer water added just before serving to maintain fizz.
- Single servings can be made by mixing 1/2 ounce simple syrup, 1 ounce vodka, and 2 ounces grapefruit juice.
