Rosemary Lemon Smashed Potatoes

Rosemary lemon smashed potatoes are golden and crispy and make the perfect easy side dish to any main course!

Ingredients

Servings

For boiling potatoes

  • 3 pounds (1.3kg) potato small to medium-sized, see notes below, Yukon gold variety
  • 1 tablespoon salt

Remaining ingredients

  • 1/3 cup (80ml) olive oil
  • 2 teaspoons kosher salt Diamond Crystal brand
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon rosemary leaves minced
  • 1 tablespoon lemon zest
  • 1/4 cup Italian flat-leaf parsley for garnish, minced

Instructions

  1. Preheat oven to 400°F and set the rack on the middle level.
  2. Bring a large pot of salted water to boil. Once boiling, add the potatoes. Let the pot come back to a boil then lower the heat and simmer the potatoes for 25-30 minutes or until fork tender.
  3. Drain the potatoes and let them sit in the colander for 5 minutes. Spread the potatoes out on a parchment paper lined baking sheet. Using a potato masher or large fork smash the potatoes to about a 1/2" thick.
  4. Drizzle the olive oil on all of the potatoes then sprinkle the kosher salt, black pepper, garlic powder, and rosemary. Bake for 40 minutes.
  5. Remove the pan from the oven and add a bit of lemon zest and a touch more olive oil to each potato. Return to the oven and bake for another 10-20 minutes or until golden brown.
  6. Sprinkle the parsley on top and serve. Enjoy!

Notes

  • Makes 6 larger servings or 8-10 moderated-sized servings.
  • Any type of potato can be used but Yukon Golds are recommended since they will hold their shape a better after smashing.
  • Use small to medium-sized potatoes. If using larger, they may need to be cut in half or quarters prior to boiling.
  • Leftovers can be saved for up to 3 days and can be reheated in the oven at 350f until warm.
