  • 2 tablespoon vegetable oil I used rapeseed oil
  • 2 tablespoon maple syrup
  • 1 tablespoon soy sauce or tamari
  • 2 teaspoon rosemary chopped, fresh
  • ½ teaspoon cayenne pepper
  • ½ teaspoon cumin ground
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • 400 g mixed raw unsalted nuts 3 cups
  • 3 tablespoon mixed raw unsalted seeds

Instructions

  1. Preheat oven to 170C/325F. Line a baking tray with baking paper.
  2. Stir the oil, maple syrup, soy sauce, rosemary, spices and salt together in a large bowl. Add the nuts and seeds and mix well.
  3. Spread the coated nuts onto the prepared baking tray and bake for 18-20 minutes, stirring occasionally, until slightly darker and toasted.
  4. Leave to cool on the baking tray, stirring occasionally, then store in an airtight jar for up to two weeks.
