Description
This recipe combines raw unsalted mixed nuts and seeds tossed with a seasoning mix of rapeseed oil, pure maple syrup, soy sauce or tamari, freshly chopped rosemary, cayenne pepper, ground cumin, smoked paprika, garlic powder, and salt. The nuts and seeds are coated evenly and then spread onto a baking tray lined with paper for roasting at 170°C for about 18-20 minutes with occasional stirring to ensure even toasting.
The finished nuts and seeds have a deeper color and toasted crunch with a balanced combination of sweet, savory, herby, and mildly spicy flavors. This snack can be stored in an airtight jar for up to two weeks and makes a versatile accompaniment to salads, cheese boards, or as a standalone treat.

Ingredients
- 2 tablespoon vegetable oil I used rapeseed oil
- 2 tablespoon maple syrup
- 1 tablespoon soy sauce or tamari
- 2 teaspoon rosemary chopped, fresh
- ½ teaspoon cayenne pepper
- ½ teaspoon cumin ground
- ½ teaspoon smoked paprika
- ¼ teaspoon garlic powder
- ½ teaspoon salt
- 400 g mixed raw unsalted nuts 3 cups
- 3 tablespoon mixed raw unsalted seeds
Instructions
- Preheat oven to 170C/325F. Line a baking tray with baking paper.
- Stir the oil, maple syrup, soy sauce, rosemary, spices and salt together in a large bowl. Add the nuts and seeds and mix well.
- Spread the coated nuts onto the prepared baking tray and bake for 18-20 minutes, stirring occasionally, until slightly darker and toasted.
- Leave to cool on the baking tray, stirring occasionally, then store in an airtight jar for up to two weeks.
