  • 1 cup cashews roasted, salted, whole
  • 1 cup almonds roasted, salted, whole
  • 1 cup pecans roasted, salted, whole
  • 2 tablespoons olive oil
  • 2 tablespoons rosemary coarsely chopped, fresh leaves
  • 1 teaspoon thyme fresh leaves
  • 1 teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt If using pre-salted nuts, you might want to add less salt here, Morton brand
  • ½ teaspoon black pepper freshly ground

Instructions

  1. Preheat oven to 300°F. Place nuts in a medium heatproof bowl.
  2. Pour oil into a small heavy saucepan and place over medium-low to low heat until just warm. Do not let it get too hot – the oil will burn.
  3. Add rosemary and thyme, and stir until aromatic, about 1 minute.
  4. Remove pan from heat, then stir in cumin and cayenne pepper. Pour the flavored oil over the nuts and stir to coat evenly. Sprinkle nuts with sugar, salt, and black pepper. Stir again.
  5. Transfer nuts to a large rimmed baking sheet. Bake for about 15 minutes total, stirring after the first 10 minutes.
  6. Let cool completely. Store in an airtight container for up to two weeks.
