Rotel Dip
Description
This recipe starts by browning ground beef and pork sausage with chili powder, salt, and pepper in a skillet, then draining excess fat for a less greasy base. The meat is placed in a slow cooker, layered with processed cheeses and canned diced tomatoes with green chilies (Rotel), then stirred to combine. Simmering on low heat for about two hours melts the cheeses and allows flavors to integrate fully.
The result is a thick, creamy dip with a mildly spicy and tangy profile from the chilies, balanced by the smooth cheese and savory meat. It can be served hot with tortilla chips or fresh-cut vegetables. The recipe includes options for seasoning variation and cheese substitutions to adjust heat and flavor intensity.
Ingredients
- 1 pound ground beef
- ½ pound ground pork sausage
- 1 pound processed cheese Velveeta brand
- 8 ounces cream cheese
- 10 ounce diced tomatoes with green chilies canned, brand: ROTEL
- 1 Tablespoon chili powder
- salt
- black pepper
- chip for dipping
- vegetable for dipping
Instructions
- In a medium skillet, add the ground beef sausage, chili powder, salt and pepper and brown until completely cooked.
- Pour cooked meat into a colander and drain excess oil. (I like to drain it over a bowl to collect the oil and then let it cool and pour into the trash can)
- Add the meat to the bottom of a slow cooker
- Place the Velveeta and cream cheese cubes on top of the meat mixture.
- Add in the tomatoes and stir to combine well.
- Cover the crockpot and cook on low for 2 hours.
- Stir and serve warm with chips and veggies.
Notes
- Drain cooked meat fat carefully to reduce greasiness in the dip.
- You can use all ground beef or all sausage instead of a mix, according to preference.
- Top with sliced jalapeno peppers if you prefer extra heat.
- If the dip becomes too thick, thin it with added milk a tablespoon at a time until desired consistency.
- To vary flavors, substitute cream cheese with sharp cheddar or pepper jack cheeses.
- Alternative seasonings like taco seasoning, smoked paprika, or cayenne pepper can replace chili powder or be omitted.
