Description
To make Rotel Dip, pork sausage is browned and drained of excess fat before mixing with undrained canned Rotel tomatoes and cubed Velveeta cheese. The heat from the cooked sausage and tomatoes melts the cheese into a smooth, creamy sauce that envelops the savory meat and spicy tomatoes. The final dip is topped with fresh green onions and diced tomatoes for added freshness and texture. This dip is served warm and pairs naturally with tortilla chips for scooping.
Ingredients
- 1 pound pork breakfast sausage
- 10.5 ounces Rotel tomatoes not drained (1 can)
- 1 pound Velveeta cheese cut into small cubes
- green onions sliced
- tomato diced
- 1 cup cheddar cheese optional (see note)
Instructions
- Place a large skillet over medium-high heat. Cook the sausage until no longer pink, about 8 minutes. Drain any excess grease.
- Stir in the Rotel tomatoes. Add the Velveeta and stir until creamy and melted.
- Top with sliced green onions and diced tomatoes for garnish. Serve warm with tortilla chips for dipping.
Notes
- If adding cheddar cheese on top, use an oven-safe skillet or transfer the dip to a baking dish before broiling to melt the cheese evenly.
