Instructions

  1. Cook the Pasta: Boil the pasta in salted water according to package instructions. Drain and set aside.
  2. Brown the Meat: In a large skillet, cook the ground beef or turkey over medium heat until fully browned. Drain any excess grease.
  3. Add the Sauce Ingredients: Stir in the Rotel tomatoes, heavy cream, taco seasoning, garlic powder, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to coat. Stir in the shredded cheddar cheese until melted and creamy.
  5. Garnish and Serve: Top with fresh cilantro or parsley, if desired, and serve hot.

Notes

  • Make Ahead: Cook the pasta and brown the meat in advance. Store them separately in the fridge for up to 2 days before combining.
  • Customizing the Flavor: Add a kick of spice with jalapeños or a pinch of cayenne pepper. Swap the ground meat for shredded chicken or make it vegetarian by adding black beans and corn.
  • Serving Suggestions: Serve with a side of garlic bread or a crisp green salad for a complete meal.
  • Storage Tips: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop or in the microwave.
