Rotisserie Chicken Casserole
Description
The recipe combines diced rotisserie or cooked chicken with cream of mushroom soup, shredded cheddar cheese, and cooked rice to create a creamy and hearty casserole base. Celery adds a fresh crunch, while Greek yogurt contributes creaminess and slight tang. Slivered almonds mixed in provide nutty texture, and crushed corn flakes combined with melted butter form a crunchy, golden topping after baking. The casserole is baked at 350°F until bubbly and heated through, then rested slightly before serving.
This casserole offers a mix of textures — tender chicken and rice in a creamy sauce with the crisp celery and almonds, topped with the buttery crunch of corn flakes. It works well served as a main dish with a simple green salad or steamed vegetables for a complete meal.
