  • 1 rotisserie chicken (about 5 cups of pulled chicken)
  • 1 cup celery diced
  • 1/2 cup onion diced
  • 3/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1/2 tsp poultry seasoning
  • 1/2 tsp salt

Instructions

  1. Remove the meat from the rotisserie chicken. Then shred or chop into bite sized pieces.
  2. In a large bowl, combine the mayonnaise, lemon juice, poultry seasoning and salt, mixing well.
  3. Next add the rotisserie chicken, celery, onion, to the mayonnaise mixture. Stir until everything is evenly coated.
  4. Chill for 30 minutes.

Notes

  • Use airtight containers to store leftovers and consume within 3 to 5 days for freshness.
  • Add 1/2 to 1 cup of mix-ins like grapes, pecans, dried cranberries, apples, boiled eggs, green onions, or crispy bacon to customize flavors.
