Russian Canned Fish in Tomato Sauce

This Russian canned fish recipe layers diced carrots, red bell peppers, and onions under pieces of floured fish, all baked in a rich tomato-based sauce made with tomato sauce, ketchup, water, and neutral oil. Slow baking for several hours at low heat allows the sauce to thicken and flavors to meld, making the fish tender and infused with the savory tomato sauce. The dish can be eaten immediately or canned for later use.

Description

The recipe begins by dicing carrots into strips and chopping bell peppers and onions into cubes, which are placed as a vegetable base in a Dutch oven. Fish pieces are coated with a mixture of flour, salt, and sugar before being arranged over the vegetables. A sauce composed of tomato sauce, ketchup, water, and neutral cooking oil is whisked and poured over the fish and veggies. Baking initially at 350°F until the sauce starts boiling, then lowering the temperature to 250°F and cooking for four hours gently cooks the fish through and thickens the sauce. The result is a tomato-rich fish dish with tender pieces layered on a bed of savory vegetables, suitable for immediate eating or preserving in cans for later enjoyment.
