This Russian Mushroom Caviar recipe starts with quartered mushrooms, sliced onions, and slightly crushed garlic cloves roasted with a sauce of Dijon mustard, olive oil, and white wine vinegar. Roasting softens the vegetables and blooms their flavors before blending them into a coarse, caviar-like consistency.The spread combines earthy mushroom depth with pungent garlic and tang from the vinegar and mustard. Ingredients

  • 300 grams mushroom or 10 oz
  • 1 onion medium-sized
  • 4 cloves garlic
  • 1 tablespoon Dijon mustard
  • 5 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • salt
  • black pepper
  • 3 thyme sprigs fresh or 1 teaspoon dried
  • 2 tablespoons chives to serve (optional, chopped
  • rye bread crackers or Russian pancakes to serve

Instructions

  1. Preheat the oven to 200 ºC or 390 ºF.
  2. Cut mushrooms in quarters, slice onion and keeping garlic cloves in shell, smash them slightly with a back of a water glass.
  3. Mix mustard, 3 tablespoons olive oil and white wine vinegar. Add a pinch of salt and black pepper.
  4. Arrange mushrooms, onion slices and garlic cloves on a baking tray. Sprinkle with the sauce and roast for 20 minutes.
  5. Remove garlic cloves from shells, add the rest of olive oil and dice everything together with a Tupperware chopper or blender. The mixture should have a grainy consistency of caviar. Season with salt and pepper to taste.
  6. Serve over rye bread, crackers or Russian pancakes. Optional: sprinkle with chopped chives. Enjoy!
