Description
This traditional Russian salad uses boiled carrots, potatoes, and beets that are peeled and diced once cooled. Additions of chopped pickles and onion bring acidity and bite to the mildly sweet and earthy vegetables. The dressing is straightforward, consisting of sunflower oil and salt, allowing the natural flavors of the ingredients to stand out.
The vegetables are cooked until tender enough to pierce easily but retain their shape when diced. Stirring them together with the seasoning ensures an evenly flavored salad with a balance of textures from the soft beets and potatoes and the crunchier pickles and onion.

Ingredients
- 3 carrot large
- 2 potato large
- 2 beet
- 6 pickle large
- 1 onion purple, yellow or white
- 2 tbsp sunflower oil
- 1 tbsp salt adjust to taste
Instructions
- Bring a large pot of water to boil. Add in carrots, potatoes, and beets. Boil for 30 minutes, or until you can pierce the veggies easily with a fork. Drain the veggies and set them aside to cool at room temperature.Note: Potatoes and carrots typically cook faster than beets. You may need to remove them a little early.
- Remove the skin from the potatoes, beets, and carrots.
- Dice the veggies into small cubes.
- Stir the veggies to combine and season with salt and oil to taste. Serve and enjoy!
