Rustic Garlic Parmesan Herb Bread

This Rustic Garlic Parmesan Herb Bread is a savory loaf made with a yeast dough infused with dried herbs—rosemary, basil, oregano—and minced garlic, giving it a fragrant aroma and complex flavor. Grated Parmesan cheese adds a salty, nutty note, while olive oil and butter create a moist crumb and crisp golden crust. The bread is shaped into round loaves and risen before baking, offering an artisanal rustic texture.

Description

The bread dough begins by activating instant dry yeast and sugar in warm water, then mixing in salt, dried herbs, and minced garlic for seasoning. Flour and Parmesan cheese are added gradually to form a tacky but manageable dough. After a thorough first rise covered in a warm place, the dough is divided and shaped into rounds for a second short rise, which helps develop structure and a light texture.

Olive oil coating on the baking sheet contributes to the crust’s flavor and prevents sticking. The Parmesan cheese scattered in the dough melts and crisps in the oven, while the dried herb and garlic blend infuses each bite with robust scents and savory notes. This bread pairs well with soups, salads, or as a garlicky accompaniment to meals.

Ingredients

Servings
  • 1 tablespoon instant dry yeast
  • 1 tablespoon granulated sugar
  • 1 cup water 100-110℉, warm
  • 1 teaspoon salt
  • 2 teaspoons rosemary dried
  • 1 teaspoon basil dried
  • 1 teaspoon oregano dried
  • 6 cloves garlic minced
  • 2 to 2 1/2 cups all-purpose flour
  • 1/3 cup Parmesan Cheese grated
  • 2 tablespoons olive oil
  • 1 tablespoon butter

Instructions

  1. In a large mixing bowl, combine 1 tablespoon instant dry yeast, 1 tablespoon granulated sugar, and 1 cup warm water. Stir in 1 teaspoon salt, 2 teaspoons dried rosemary, 1 teaspoon dried basil, 1 teaspoon dried oregano, and 6 cloves minced garlic.
  2. Add 2 cups of the all-purpose flour and 1/3 cup grated parmesan cheese to the bowl. Stir until a rough dough forms. Gradually add in the remaining 1/2 cup flour until the dough is smooth and elastic. Add enough flour so the dough is soft and slightly tacky but not sticky.
  3. Transfer the dough to a lightly greased bowl. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Preheat your oven to 375°F (190°C). Drizzle a baking sheet with 2 tablespoons olive oil.
  5. Once the dough has risen, divide it into two equal portions. Shape each portion into a round loaf and place them onto the prepared baking sheet. Cover and let the loaves rise for another 15 to 20 minutes.
  6. Top each loaf with a 1/2 tablespoon-size piece of butter.
  7. Bake the loaves in the preheated oven for 18-20 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  8. Once baked, remove from the oven and allow to cool on a wire rack before slicing.
