Rustic Peach Galette

The Rustic Peach Galette combines ripe peach slices sweetened with sugar and spiced with cinnamon and vanilla, layered atop a single pie crust that's folded around the filling for a freeform tart. The melted butter brushed on the crust and the sprinkling of coarse sugar create a golden, crisp edge contrasting with the juicy, bubbly peaches. This recipe offers a straightforward method to enjoy seasonal fruit in a simple, flaky pastry that doesn’t require a pie pan.

Description

Rustic Peach Galette is a freeform tart featuring sliced peaches tossed in sugar, cornstarch, cinnamon, and vanilla, which thickens and sweetens the filling while baking. The pie crust is brushed with melted butter before laying the fruit close to its edge, then the dough is carefully folded over in sections, creating a homemade, rustic appearance. Baking at a high temperature develops a golden-brown crust with a crunchy texture, balancing the soft and juicy peach filling.

The galette is best served warm or at room temperature, making for a casual dessert showcasing fresh peaches with a crisp, buttery base. It pairs well with a scoop of vanilla ice cream or whipped cream for added richness.
