Sabzi Khordan (Persian Herb Platter)

Sabzi Khordan is a traditional Persian herb platter featuring an assortment of fresh herbs like cilantro, parsley, mint, basil, dill, tarragon, and green onions, paired with sliced radishes, feta cheese, walnuts, and bread. This vibrant assembly offers fresh, aromatic flavors ideal for an appetizer or side.

Description

This platter combines a generous variety of fresh herbs—cilantro, parsley, mint, basil, dill, tarragon, and green onions—carefully washed, dried, and arranged alongside thinly sliced radishes. The herbs provide bright, aromatic, and often slightly peppery or sweet flavors that celebrate freshness and balance.

Feta cheese and walnuts add a creamy and crunchy dimension respectively, complementing the herbal elements. Bread pieces like barbari or lavash are included for serving, enabling diners to combine the herbs, cheese, and nuts with bread for varied bites.

Sabzi Khordan serves as a refreshing, palate-cleansing appetizer or side that emphasizes fresh herbal notes and simple, natural ingredients. It is traditionally presented as a shared platter and highlights the vibrant Persian flavor profile through its combination of herbs and accompaniments.

Different breads such as barbari, lavash, pide, or pita can be used. For an elevated touch, marinated feta may substitute standard feta. Preparing the herbs and drying them in advance allows for refrigeration up to one day before serving.
