Salată de Boeuf: Romanian Beef Salad

Salată de Boeuf is a classic Romanian beef salad combining boiled vegetables, cooked meat, and peas with finely chopped pickled cucumbers, all coated in homemade mayonnaise made from egg yolk, mustard, lemon juice, and olive oil. The salad is garnished with olives and pickled bell pepper slices, offering a creamy, tangy, and savory dish with a mix of soft and crisp textures, typically served as a cold appetizer.

Description

Salată de Boeuf is prepared by boiling root vegetables such as potatoes, parsnip, and carrots until tender, along with cooked chicken or beef. The cooked items are cooled and finely chopped, then combined with boiled peas and diced pickled cucumbers. The dressing is a homemade mayonnaise made by emulsifying egg yolk, mustard, lemon juice, salt, and olive oil, creating a creamy and tangy coating that binds the salad ingredients together.

The salad blends the earthiness of root vegetables and the savory notes of meat with the sharpness of pickled cucumbers and the richness of the mayonnaise dressing. Garnishing with olives and pickled bell pepper adds additional bursts of flavor and color. This dish is typically served cold as a flavorful side or appetizer in Romanian cuisine.
