Ingredients

  • 5 tomato seeds removed and diced, large
  • 4 green onions finely sliced
  • 1 green chili pepper stem removed, seeded, and finely diced, small
  • 1/4 cup Italian parsley chopped

Dressing:

  • 1/4 cup peanut butter smooth
  • 1/3 cup neutral cooking oil generic cooking oil
  • 2 lime juiced
  • salt to taste

Instructions

  1. In a large bowl, toss together tomatoes, green onions, pepper, and parsley.
  2. Add peanut butter to a small bowl, Whisk in the oil until smooth. Mix in the lime juice and salt.
  3. Gently toss the tomato mixture with the peanut butter dressing.
  4. Serve immediately.
