Salisbury Steak with Mushroom Gravy

Salisbury Steak with Mushroom Gravy showcases seasoned ground beef patties cooked until browned and served with a savory mushroom sauce. The gravy combines sautéed mushrooms, onions, garlic, and a blend of beef broth and seasonings thickened with flour. The dish offers tender meat with rich, umami mushroom flavors and a creamy textured gravy that complements the steaks well.

Description

This Salisbury Steak with Mushroom Gravy recipe begins by combining ground beef with onions, garlic, seasonings, panko crumbs, egg, and condiments to form flavorful patties. The patties are shaped and cooked in a skillet until golden brown and fully cooked through. The inclusion of Italian seasoning, Worcestershire sauce, and Dijon mustard adds depth and complexity to the meat.

After the patties are cooked, the pan is used to sauté finely diced onions, garlic, and sliced brown mushrooms in butter until browned and tender. A mixture of flour, beef broth, water, and seasonings is then whisked and added to the skillet to create a thickened mushroom gravy. The patties return to the skillet to warm through in the gravy, absorbing its flavors.

The final plate combines the juicy, savory beef patties with the rich mushroom gravy—great served over mashed potatoes, rice, or noodles. The gravy’s creamy texture and umami from mushrooms and Worcestershire sauce enhance the robust beef flavor, making this a classic comfort meal.

Ingredients

Servings

For the Salisbury Steak:

  • 1 lb ground beef 90% lean
  • 1/2 onion finely diced
  • 2 garlic minced, cloves
  • 1/3 cup panko bread crumbs
  • 1 egg large
  • 1 ½ tsp Worcestershire sauce
  • 2 tsp mayonnaise
  • 1 tsp salt sea salt
  • ½ tsp black pepper
  • 1 ½ tsp Italian seasoning
  • 1 Tbsp ketchup
  • 1 ½ tsp milk (whole milk or any kind)
  • 2 tsp Dijon mustard
  • 1 Tbsp olive oil to sautee

For the Mushroom Gravy:

  • 1/2 yellow onion finely diced
  • 1 Tbsp butter unsalted
  • 8 oz brown mushrooms sliced
  • 2 garlic minced, cloves
  • 2 Tbsp all-purpose flour
  • 1 1/2 cup beef broth + 1/2 cup water
  • ½ tsp Worcestershire sauce
  • ½ tsp Dijon mustard
  • 2 tsp ketchup
  • ¼ tsp salt sea salt
  • tsp black pepper ground

Instructions

  1. In a bowl combine all of the ingredients for the beef patties (except the oil). Mix until well incorporated and shape into 4 oval or round patties flattening the center for even thickness throughout.
  2. Heat 1 Tbsp oil in a non-stick pan, once hot, add patties to the skillet and cook until patties are golden brown on both sides and fully cooked. Remove the patties from the skillet and cover to keep warm.
  3. Sauté ½ onion (you can also slice onion into thin slices, whatever your personal preference is) in the same skillet. Once the onion starts to become tender, add the garlic and butter and mix.
  4. Add the mushrooms and sauté until browned, mixing frequently. Lightly season with salt and pepper.
  5. In a bowl, whisk together all of the remaining gravy ingredients: 2 Tbsp flour, 1 1/2 cups broth, 1/2 cup water, 1/2 tsp Worcestershire, 1/2 tsp dijon, 2 tsp ketchup, 1/4 tsp salt, and 1/8 tsp pepper. Pour into the mushrooms and cook until the gravy thickens.
  6. Add the patties back to the pan and completely cover with the gravy and mushrooms and cook just until patties are heated through.
