- 1 pack salmon fresh or defrosted, 260g, The Saucy Fish Co. brand with chilli lime and ginger dressing
- 1-2 tbsp mayonnaise low fat
- 16 blinis
- cucumber assorted toppings; cucumber sliced, beetroot pureé, spring onions sliced, etc
- beetroot

- sesame seeds
- watercress
Instructions
Salmon Blinis Instructions
- Preheat oven to fan-assist 170 C / 190 C / gas 5 / 375 F.
- Open packet, remove salmon and place on baking tray. Set the dressing aside.
- Bake the salmon for 20 mins, then remove and let cool.
- Transfer the cooled salmon to a bowl and lightly mash (don’t mash all the way, nice to have some big chunks).
- Add low-fat mayo and the chili lime and ginger dressing from the fish, and mix to combine.
- Just before serving, assemble the blinis with the salmon mix and various toppings.
Notes
- The salmon mixture can be spiced up by adding more chili or a few dashes of hot sauce to suit your heat preference.
- Use store-bought blinis to make assembly easy, but homemade blinis can be used if preferred.
