Salmon Croquettes
Description
This Salmon Croquettes recipe uses drained canned salmon mixed with egg, finely chopped celery and onion, dill weed, garlic powder, salt, pepper, and bread crumbs to bind the mixture. Formed into patties and coated in bread crumbs, they are shallow-fried in oil until golden and crisp.
The croquettes have a crispy outer layer with a moist and flavorful center, combining the savory salmon with aromatic herbs and mild pungency from onion and celery. Frying in peanut or vegetable oil achieves a good crust without overpowering flavors.
This dish suits an appetizer, snack, or main course paired with salads or sauces. It is easy to prepare from pantry staples and cooks relatively quickly.
The croquettes can also be cooked in an air fryer: freeze the formed patties for 30 minutes, then cook at 400°F for about 10 minutes, flipping halfway. Using appropriate oil with a high smoke point is recommended.
Ingredients
- 12 ounces canned salmon drained and flaked
- 1 egg
- ¼ cup celery finely chopped
- ¼ cup onion finely chopped, or sliced green onions
- ½ teaspoon dried dill weed
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper ground
- 1 cup bread crumbs plus ¼ cup for coating
- cooking oil for frying
Instructions
- In a medium bowl, mix together the salmon, egg, celery, onion, dill, garlic powder, salt, pepper, and 1 cup bread crumbs.
- Form the mixture into eight patties.
- Dust patties with remaining bread crumbs.
- Heat oil to a depth of approximately 1/4-inch in a large skillet over medium heat.
- Fry for about 8-10 minutes, turning as needed, until golden brown.
- Remove to paper towels to drain.
Notes
- Canned pink salmon works well for this recipe, providing convenience without sacrificing flavor.
- Use peanut, canola, or vegetable oil for frying; avoid olive oil due to its low smoke point.
- For air frying, freeze croquettes for 30 minutes, then cook at 400°F for about 10 minutes, flipping halfway through.
