Salmon Croquettes
Description
Salmon Croquettes feature canned or cooked salmon flaked and mixed with panko breadcrumbs, egg, minced garlic or garlic powder, chopped chives or onion powder, diced red bell pepper, mayonnaise, fresh parsley, Dijon mustard, lemon juice, lemon zest, salt, and pepper. The mixture is softly combined to preserve tenderness while allowing the croquettes to hold their shape.
The formed patties are arranged on a parchment-lined baking sheet and baked at 425°F for 13 to 15 minutes, until lightly browned on the outside and heated through. Alternatively, they can be pan-fried in olive oil for a golden crust.
The seasoning blend of garlic, lemon, and mustard brings brightness and savory depth. These croquettes serve well as appetizers, sandwiches, or paired with salads for a light meal.
Leftovers keep refrigerated for up to three days and are best reheated in a skillet to maintain texture. Handling the mixture gently prevents the patties from breaking due to the softer consistency compared to meat-based patties.
Ingredients
- 2 ½ cups salmon or 14.75 ounce can pink salmon, bones removed, flaked
- 1 cup panko bread crumbs
- 1 large egg whisked
- 1 clove garlic minced, or ½ teaspoon garlic powder
- 2 tablespoons chives or ¼ teaspoon onion powder, chopped fresh
- 2 tablespoons red bell pepper finely diced
- 2 tablespoons mayonnaise
- 1 tablespoon parsley chopped, fresh
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice fresh
- 2 teaspoons lemon zest
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 3 tablespoons olive oil divided
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine flaked salmon, panko bread crumbs, egg, garlic, chives, red bell pepper, mayonnaise, parsley, Dijon mustard, lemon juice, lemon zest, 1 tablespoon of olive oil, salt, and black pepper. Gently combine the ingredients.
- Using a slightly heaping ¼ cup measuring cup, scoop the mixture and form it into 9 patties. Press them together gently but firmly so they hold their shape and don't fall apart during baking.
- Place the salmon croquettes on the prepared baking sheet, and bake them in the preheated oven for 13-15 minutes or until they're lightly browned and cooked through.
Notes
- To pan-fry, add olive oil to a skillet over medium-high heat and cook croquettes about 5 minutes per side until golden brown.
- Handle the patties gently because they are softer than typical hamburger patties and can fall apart.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat croquettes in a skillet over medium heat to preserve crispness and texture.
