Salmon Patties

Salmon Patties made from fresh baked salmon combined with sautéed onions and red bell peppers, bound with eggs, mayonnaise, and panko crumbs, seasoned with Old Bay and sriracha, then pan-fried to a crispy golden brown. The patties offer a moist interior with a crisp exterior and a balanced flavor profile including a hint of heat and savory depth. Cooking in batches ensures even crispness and preventing overcrowding maintains texture.

Description

This Salmon Patties recipe starts with seasoning and baking a fresh salmon filet until cooked through, then flaking it into bite-sized pieces. The fish is mixed with softened sautéed onions and red bell peppers, which add sweetness and tender texture. Eggs, panko breadcrumbs, mayonnaise, Worcestershire sauce, sriracha, and Old Bay seasoning form a flavorful binder that holds the patties together.

Portioned patties are pan-fried in olive oil and butter until golden and crispy on both sides. The cooking method yields a crunchy exterior contrasted with a tender and moist interior. The inclusion of Old Bay and sriracha provides a touch of spice and umami that enhances the salmon's natural flavor.

These patties can be served as a main dish, burger-style with buns, or alongside salads and sides. Making them in batches allows for maintaining heat control to achieve a crispy texture without burning. They are a practical way to transform fresh salmon into a versatile, handheld preparation.

Ingredients

Servings
  • 1 lb salmon filet fresh
  • kosher salt
  • black pepper
  • 4 tbsp olive oil divided
  • 1 onion finely diced, medium
  • 1 red bell pepper diced
  • 2 Tbsp butter divided, unsalted
  • 1 cup panko bread crumbs
  • 2 egg lightly beaten, large
  • 4 Tbsp mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 tsp sriracha
  • 1.5 tsp Old Bay seasoning

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with foil for easy cleanup. Place salmon filet on baking sheet, season with salt and pepper, brush with 1 tablespoon olive oil. Bake for 15-20 minutes until cooked through. Allow to cool, then flake with a fork. Remove any bones or skin you find.
  2. Heat a skillet over medium heat, add 1 tablespoon olive oil and one tablespoon butter. Saute the onion and bell pepper until soft and golden, about 10 minutes. Remove from heat.
  3. In a large bowl, combine the flaked salmon, onion and bell pepper, eggs, panko breadcrumbs, mayo, worcestershire sauce, sriracha and old bay seasoning. Mix until combined.
  4. Wipe out the skillet and heat over medium high heat. Add 1 more tablespoon each of olive oil and butter. Form the salmon mixture into patties, about 1 and 1/2 tablespoons in size.
  5. Cook the patties in the skillet 3-4 minutes, until golden and crispy, then flip and repeat. Cook in batches, do not overcrowd the pan. Repeat until all of the patties are cooked.
