Description

This salmon patties recipe starts by baking fresh salmon seasoned with olive oil, salt, and pepper until just cooked, then cooling it fully. Meanwhile, diced onion and red bell pepper are sautéed until soft. The salmon is then flaked and combined with the cooked vegetables, fresh dill and parsley, mayonnaise, Dijon mustard, minced garlic, almond flour, and beaten eggs. The mixture is shaped into small patties for cooking.

The almond flour acts as a gluten-free binder, while the fresh herbs and Dijon mustard provide herbal and tangy notes. Cooking options include pan frying or oven baking. An optional lemon dill mayonnaise sauce combines mayonnaise, fresh dill, lemon juice and zest, salt, and pepper, offering a bright, creamy complement. These patties are suitable for meals or prepping ahead as they freeze and reheat well.

Adjustments include using only one egg if using oily King Salmon or increasing mayonnaise when using dryer canned salmon to maintain moisture.

  • 1 pound salmon fresh
  • cup olive oil divided
  • 1 onion finely diced, medium
  • 1 red bell pepper finely diced
  • 1 to 2 garlic minced, cloves
  • ½ cup almond flour
  • 2 egg beaten, large
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • cup parsley finely chopped, fresh
  • 2 tablespoons dill finely chopped, fresh
  • kosher salt
  • black pepper

Lemon Dill Mayonnaise (optional)

  • 1 cup mayonnaise
  • 2 tablespoons dill finely chopped, fresh
  • ½ lemon zested and juiced (about 1 ½ tablespoons juice)
  • kosher salt
  • black pepper

Instructions

  1. Bake the salmon. Preheat the oven to 425°F. Drizzle the salmon with a tablespoon of olive oil and generously season with salt and black pepper. Cook for 10 to 13 minutes, or until just cooked through. Then, remove the salmon from the oven and cool completely in the refrigerator for 5 to 10 minutes.
  2. Cook the vegetables. While the salmon is cooling, add one tablespoon of olive oil to a large pan and sauté the onion and bell pepper for 6 to 8 minutes, or until soft and translucent. Remove from the heat and let cool.
  3. Make the patties. Use your hands to flake the cooled salmon (removing the skin) into a large mixing bowl. Add the onion, bell pepper, dill, parsley, mayonnaise, Dijon mustard, garlic, almond flour, and eggs. Combine all ingredients with your hands until well-mixed. Then, form the salmon mixture into small patties with your hands and place them to the side. Pro Tip: I like to place the formed patties on a parchment lined baking tray to easily move them to the stove.
  4. Cook the patties. Heat several tablespoons of olive oil in a large pan on medium heat and cook the salmon patties for 3 to 4 minutes on each side. Remove the salmon patties to a paper towel-lined plate.
  5. Make the lemon dill sauce. Add the mayonnaise, chopped dill, lemon zest and juice, salt, and pepper to a small mixing bowl and stir to combine.
  6. Serve. Serve the salmon patties with the lemon dill sauce.

Notes

  • To bake instead of pan fry, spray a baking sheet and bake patties at 400°F for 10-12 minutes per side.
  • King Salmon's higher oil content may require only one egg in the mix.
  • For drier canned salmon, increase mayonnaise to ¼ cup to keep patties moist.
  • These patties freeze and reheat well, making them good for meal prep.
