Ingredients

  • 15 oz canned salmon drained
  • 1/2 cup panko breadcrumbs
  • 1/4 cup onion finely chopped
  • 2 egg beaten, large
  • 2 tablespoons olive oil for frying
  • salt to taste
  • black pepper to taste

Instructions

  1. In a mixing bowl, combine drained salmon, breadcrumbs, onion, and beaten eggs. Season with salt and pepper. Mix until well combined.
  2. Form the mixture into 8 equal-sized patties.
  3. Heat olive oil in a large skillet over medium heat. Fry the patties for about 3-4 minutes on each side or until golden brown and crispy.
