Salmon Patties blend canned or cooked salmon with grated onion, panko breadcrumbs, and parmesan to create tender, fluffy patties with a mild herb flavor from dill and shallots. The mixture is shaped into round patties and baked until lightly crisp on the outside while remaining moist inside. These patties can be paired with yogurt or sour cream dips for a well-rounded serving.

Description

Salmon Patties are made by mixing panko breadcrumbs softened with grated onion juices, finely minced garlic, chopped shallots, dill, eggs, parmesan cheese, salt, and pepper. Flaked canned or cooked salmon is gently folded in to maintain chunks of fish and a fluffy texture. The mixture is scooped into patties about 1.5 cm thick and baked on an oiled tray to develop a gentle crispness without pressing them down, which keeps them from sticking.

Baking at a high temperature followed by turning the patties ensures even cooking and a golden color. The finished patties offer a tender interior with light seasoning, which pairs well with sour cream, yogurt-based dips, or fresh herbs, making them suitable as a light main dish or appetizer.

The recipe also suggests serving the patties alongside cauliflower puree and a yogurt slaw for balanced flavors and textures. Ingredient notes include the use of red or pink canned salmon with bones for added nutrition, optional breadcrumb alternatives, and ways to soften the patties by soaking breadcrumbs with onion.

Ingredients

  • 1 cup panko breadcrumbs (Note 1 for subs)
  • 1 onion or 1/2 large), grated, small
  • 1 garlic finely minced, clove
  • 400 g/ 14 oz salmon drained (Note 2, cooked fresh, or canned red or pink salmon
  • 2 shallot finely sliced, or scallions or green onions
  • 1/3 cup dill roughly chopped (or 1 tsp dried herbs of choice, fresh
  • 2 egg
  • 1/2 cup parmesan , grated or shredded
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Cooking:

  • 2 tbsp vegetable oil
  • cooking spray

Instructions

  1. Preheat oven to 220C/430F standard (200C fan)
  2. Place breadcrumbs in a bowl. Grate over onion, including juices. Mix onion into breadcrumbs, ensuring all breadcrumbs are soaked. (Note 3)
  3. Add remaining ingredients except salmon. Mix well.
  4. Add salmon. Stir through gently, leaving flakes of salmon (rather than vigorously mixing salmon into tiny pieces).
  5. Scoop up 1/4 cup mixture (level, packed standard ice cream scoop, see Video). Form round patties about 1.5 cm/ 2/3" thick and set aside.
  6. Drizzle oil all over tray. Place in oven for 2 minutes until hot - oil will spread over tray. Tilt tray to spread if needed.
  7. Place patties on tray - DO NOT press down (makes them stick on tray). Spray surface with oil spray.
  8. Bake 15 minutes. Flip, spray surface with oil spray, bake 5 minutes.
  9. Serve with sour cream or yoghurt on the side for dipping / dolloping, and extra fresh dill if desired.
  10. I served mine with cauliflower puree and Yoghurt Slaw - healthy side options! (Note 3)

Notes

  • Panko breadcrumbs provide a lighter, fluffier texture; substitute with crushed rice crackers or almond meal if needed without altering the recipe.
  • Use canned red salmon in spring water, including skin and bones which soften during cooking, or substitute with cooked fresh salmon.
  • Fold the salmon in gently to retain flakes, ensuring tender patties rather than a dense mixture.
  • Onion grated directly onto breadcrumbs helps keep patties moist and flavorful.
  • Serve patties with sour cream or yogurt dips; recommended sides include cauliflower puree made with browned butter and a yogurt slaw with fresh vegetables.
