Description

Ingredients

  • 7-8 ounce salmon flaked, cooked
  • 1 celery diced, stalk
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon Worcestershire sauce omit for gluten-free diet
  • 1 egg
  • 1/2 cup pork rinds
  • 1 tablespoon butter
  • 1 tablespoon avocado oil or olive oil

Instructions

  1. Cook salmon for 20 minutes at 350 degrees. Cool and remove skin, then shred into flakes with two forks. 
  2. In a small bowl whisk together egg and Worcestershire sauce. Set aside.
  3. In a medium bowl mix fish, pork rind, Old Bay Seasoning, and celery together. Add in egg mix. 
  4. Form patties (1/3 cup) and place on wax paper or parchment paper and refrigerate for a minimum of 15 minutes. 
  5. Heat a large skillet over medium heat and add butter and oil. When melted add patties and cook for 2-3 minutes. Flip and cook on the other side for an additional 2-3 minutes.  

Notes

  • Bread crumbs or panko can replace pork rind crumbs if not following low-carb or gluten-free diets.
  • Chill patties before cooking to prevent falling apart during frying.
  • Cook patties over medium heat until both sides are golden brown, about 2-3 minutes per side.
