Salmon Salad

The best salmon salad recipe, loaded with dill celery and avocado. This makes enough for four people to have as a meal.

Ingredients

Servings
  • 2 lbs salmon chilled, poached
  • 1/3 cup onion white or yellow, finely chopped
  • 1/3 cup dill chopped, fresh
  • 1/2 cup celery finely chopped
  • 1/2 cup avocado
  • 1/3 cup mayonnaise - just enough to make it creamy
  • 1 tsp mustard
  • lemon juice to taste, fresh
  • salt
  • black pepper
  • 12 cups lettuce iceberg, , Romaine, etc, pieces

Instructions

  1. Break the cooked salmon into large flakes, removing any skin and bones and place in a bowl.
  2. Add the remaining ingredients, mix well without breaking up the salmon too much, until it's fully combined.
  3. Divide the lettuce between 4 plates.
  4. Divide the salad between the plates and place on top of lettuce leaves for a salad or use in a sandwich if desired.

Notes

  • Make the poached salmon ahead of time to make this fast and easy!
