Salmon Salad with Grapes and Pecans

This salmon salad combines tender, poached salmon cubes with crisp celery, sweet halved grapes, and crunchy chopped pecans. The dressing blends mayonnaise, plain yogurt, and apple cider vinegar to create a creamy yet tangy coating that holds the ingredients together nicely. The salad can be served chilled over lettuce or spooned onto bread or croissants for a refreshing sandwich option, making it suitable for a light lunch or snack.

Description

Salmon Salad with Grapes and Pecans features poached salmon gently cooked in a mixture of white wine and water until tender and flaky. The salad balances savory salmon with fresh, crunchy celery and the natural sweetness of red seedless grapes. Chopped pecans add a nutty crunch, enhancing the texture contrast in the dish. The dressing combines mayonnaise and Greek yogurt with apple cider vinegar and seasonings, offering a creamy and slightly tangy flavor that complements the salmon and fruits.

The method emphasizes cooling the salmon before combining it with the other ingredients to preserve texture. This salad works well served on its own over fresh greens or as a sandwich filling, taking advantage of its balance of textures and flavors. The inclusion of pecans and grapes gives it a distinctive sweetness and crunch which sets it apart from basic seafood salads.

Ingredients

Servings

Salmon Salad:

  • 20 salmon fillet or a bit more, about 3 cups of cooked cubes, ounces
  • ½ cup water
  • ½ cup white wine
  • 1 cup red seedless grapes halved
  • ½ cup celery chopped
  • ½ cup pecans chopped

Dressing:

  • ½ cup mayonnaise
  • ½ cup yogurt plain, Greek
  • 2 Tablespoons apple cider vinegar or enough to thin to mixable consistency
  • ¼ teaspoon salt pepper (or to taste)

Instructions

  1. Bring ½ cup white wine and ½ cup water (can sub all water or broth) to a simmer in a large skillet. Salt salmon lightly, then add to the skillet and cover. Simmer until cooked through, about 10 minutes. Cut into bite-sized cubes and cool (can set cooked salmon briefly in freezer to hasten cooling).
  2. Halve grapes and chop celery. Chop pecans if needed.
  3. Mix dressing ingredients.
  4. Combine cooled salmon with other ingredients and the dressing. Mix with a spoon until just combined.
  5. Serve on bread or croissants as a sandwich or over lettuce as a salad.
