- 1 teaspoon rice vinegar
Bowls
- 1 cup sushi rice cooked and cooled to room temperature
- 2 nori dampened, toasted seaweed
- 4 oz smoked salmon
- 1 cup cucumber cut into matchsticks
- 1 avocado sliced
- 2 scallions sliced
- 1 teaspoon black sesame seeds

Instructions
Wasabi Mayonnaise
- In a small bowl, whisk together the mayonnaise, wasabi paste, and rice vinegar. Refrigerate until ready to use.
Bowls
- Divide rice between two serving bowls
- With your fingers, dampen nori with cold water, and cut into strips. Divide the nori between the two bowls.
- Roll smoked salmon slices into cigar shapes and divide between the bowls
- Top the bowls with avocado, cucumber slices and scallions.
- Sprinkle each bowl with sesame seeds, and drizzle with wasabi mayonnaise
- Serve with soy sauce on the side.
Notes
- Any short-grain rice like arborio can replace sushi rice if unavailable.
- Reduce wasabi paste quantity for a milder sauce if desired.
- Sriracha sauce is a good substitute for wasabi paste in the mayonnaise.
