Salmon with Fennel, Citrus and Olives
Description
Salmon with Fennel, Citrus and Olives features a whole salmon piece seasoned with salt and pepper, topped with thin slices of fennel and lemon, crushed Castelvetrano or Kalamata olives, and capers. Drizzled with olive oil and baked at 375°F, the salmon cooks until medium rare or medium, absorbing the bright and salty accents from the toppings.
The fennel softens in the oven, lending a subtle anise flavor that pairs well with citrusy lemon slices and the briny olives and capers. This gentle baking method preserves the salmon's moist, tender texture while infusing it with fresh, complementary flavors.
Served with additional lemon wedges, this dish works well for a relaxed dinner showcasing balanced salty, citrus, and herbal notes. It's straightforward to prepare yet feels elegant thanks to the flavor layering.
