Salmorejo

Salmorejo is a traditional thick soup-cum-sauce from Spain, from the Cordoba region of Andalusia, made with tomato and garlic, decorated with Serrano ham and hard-boiled egg.

Ingredients

Servings
  • lbs pear tomatoes (or elongated tomatoes), peeled, seeded, and chopped
  • 7 oz white bread
  • ½ cup extra virgin olive oil
  • 2 cloves garlic , crushed
  • 1 teaspoon salt

For the topping

  • 1 large egg finely chopped, hard-boiled
  • 3 tablespoons serrano ham diced
  • 2 teaspoons olive oil

Instructions

  1. Place the chopped tomatoes and garlic into a mortar, and crush with a pestle, until smooth.
  2. Add the bread, half of the olive oil and salt, and mix.
  3. While very gradually incorporating the rest of the olive oil, grind for at least 10 minutes, until you obtain a homogeneous and smooth paste.
  4. Pour the mixture into a serving bowl, cover with cling film, and place in the refrigerator for at least 1 hour.
  5. Top with serrano ham, hard-boiled egg and olive oil.
