Salsa De Chiltepin
Description
This Salsa De Chiltepin blends dried chiltepines, tomatoes, and aromatics into a spicy sauce with a smooth texture. The tomatoes are boiled briefly to soften them, then cooked with chiltepines to infuse their heat. Blending with garlic, onion, dried oregano, salt, black pepper, and apple cider vinegar provides a balanced flavor profile featuring heat, acidity, and herbal notes. The salsa can be adjusted by adding some cooking liquid for desired consistency. It is ideal to serve alongside grilled meats, tacos, or as a flavorful accompaniment to various Mexican dishes.
Ingredients
- ¼ cup dried chiltepines
- 3 tomato sliced in quarters, medium
- 2 garlic peeled, cloves
- 1 tablespoon onion white or yellow, just a little piece
- 1 teaspoon oregano dried
- 1 teaspoon kosher salt or sea salt
- black pepper
- 2 Tablespoon apple cider vinegar
Instructions
- In a medium pot add the tomatoes and about 2 cups water or enough to cover the tomatoes.
- Cover and bring to a soft boil over medium high heat. Once you reach the boiling point, lower heat to medium low and cook the tomatoes for 2 minutes.
- Add the chiltepines and cook over medium heat until the tomatoes are soft. About 5 minutes. Remove from heat and cool the tomatoes and chiltepines in the water for about 5 minutes.
- To a blender, add the cooled tomatoes, chiltepines and rest of the ingredients. Puree well for a couple of minutes or until you no longer see chunks.
- If the salsa is too dense, add one tablespoon of the cooked water at the time until you reach the desired consistency.
