Description
This creamy jalapeño sauce begins by boiling fresh jalapeños, white onion quarters, and garlic cloves until they become fork tender, which mellows their raw sharpness yet maintains flavor. After draining, these ingredients are blended with vegetable oil, white vinegar, kosher salt, and cumin until smooth. The vinegar adds acidity while the oil helps emulsify the mixture into a creamy consistency. Adjusting salt or vinegar after blending allows for balanced flavor.
The sauce's texture is smooth and spreadable, making it versatile as a dip or condiment on Mexican dishes and grilled foods. Its flavor is tangy with a moderate fresh jalapeño heat that is less intense than raw salsa but vibrant.
Stored refrigerated in a sealed container, the sauce remains fresh about one week. If separation occurs, shaking or re-blending recombines the ingredients without affecting quality.
Ingredients
- 8 oz jalapeño peppers stems removed, fresh
- 1 white onion skin removed, quartered, medium
- 2 garlic cloves
- ½ cup vegetable oil
- 1 tbsp white vinegar
- 1 tsp kosher salt
- 1/4 tsp cumin ground
Instructions
- In a saucepan over medium high heat, bring the jalapeños, onion and garlic to a boil with enough water to cover. Lower the heat, cover the pan, and simmer for 15 minutes. The vegetables should change in color and be fork tender, but not mushy. Drain and discard water.
- Transfer the drained jalapeños, onion and garlic to a blender or food processor, combine with the oil, vinegar, salt and cumin.
- Process until smooth and creamy, about 1-2 minutes. Taste for salt, or vinegar and adjust if necessary. Transfer to a squeeze bottle, and refrigerate. It will last for about a week and makes 2 to 2 1/2 cups total.
- Perfect to use as a dip or squeeze over tacos, burritos, enchiladas, grilled meats, seafood and roasted vegetables.
Notes
- Store in a sealed container refrigerated for up to one week to maintain freshness.
- If the sauce separates during storage, shake vigorously or blend again to restore the creamy texture.
