  • 1/3 red onion finely chopped, medium
  • 1/2 red bell pepper seeded and finely chopped, medium
  • 1 cucumber peeled, seeded and diced, small
  • 1/2 jalapeno chile seeded and finely chopped
  • 1/2 cup cilantro chopped, fresh
  • 2 tablespoons lime juice fresh
  • 2 tablespoons extra virgin olive oil
  • salt kosher salt and ground pepper to taste
  • black pepper kosher salt and ground pepper to taste

Make the Salsa

  1. In a large bowl, add all ingredients and toss to combine. Cover and refrigerate until ready to serve.

Notes

  • Fresh pineapple is preferred for the best flavor and texture; however, frozen or canned pineapple can be used in a pinch.
