- 1 pineapple about 2 lbs, peeled, cored & diced, small (see note
- 1/3 red onion finely chopped, medium
- 1/2 red bell pepper seeded and finely chopped, medium
- 1 cucumber peeled, seeded and diced, small
- 1/2 jalapeno chile seeded and finely chopped
- 1/2 cup cilantro chopped, fresh
- 2 tablespoons lime juice fresh
- 2 tablespoons extra virgin olive oil
- salt kosher salt and ground pepper to taste
- black pepper kosher salt and ground pepper to taste

Make the Salsa
- In a large bowl, add all ingredients and toss to combine. Cover and refrigerate until ready to serve.
Notes
- Fresh pineapple is preferred for the best flavor and texture; however, frozen or canned pineapple can be used in a pinch.
