Salsa, Ham, and Egg Roll-Ups

This recipe creates ham roll-ups filled with soft scrambled eggs, a salsa kick, and melted cheddar cheese. The combination of savory ham, creamy eggs, and a touch of salsa provides a balanced flavor and a pleasing texture contrast. Baked briefly to melt extra cheese on top, these roll-ups make a practical handheld breakfast or snack option with versatile fillings.

Description

Salsa, Ham, and Egg Roll-Ups offer a savory hand-held dish combining scrambled eggs with cheddar cheese and salsa, wrapped in deli ham slices and baked until the cheese topping melts. The eggs are cooked softly with sharp cheddar folded in before spreading on deli ham. Adding salsa before rolling up the ham adds moisture and a slight tang. Baking the roll-ups melts additional shredded cheddar on top, providing a golden, cheesy crust.

The dish balances creamy eggs and melty cheese with the saltiness of ham and brightness from salsa. The roll-ups are easy to portion and hold, making them well suited for a quick breakfast or light meal. Their individual size and simple assembly let you customize ingredients with veggies or meats as desired.

This recipe works well when the eggs remain softly scrambled, as they continue to cook slightly during baking. Using a lightly greased pan or parchment paper helps prevent sticking during the short bake. These roll-ups are best enjoyed fresh out of the oven to maintain the soft texture of the eggs and melted cheese on top.

Ingredients

Servings
  • 1 tablespoon butter
  • 4 large egg
  • ¾ cup cheddar cheese divided into ¼ cup and ½ cup, shredded
  • ¼ cup salsa (I used Pace)
  • 5 lices ham deli

Instructions

  1. Preheat your oven to 450 degrees Fahrenheit.
  2. Add 1 tablespoon of butter to a medium-sized pan over medium heat.
  3. Add four large eggs to a bowl and whisk until well combined.
  4. Once the butter has melted, add the eggs to the pan. Scramble the eggs to your liking.
  5. Remove from heat and fold in ¼ cup shredded cheddar cheese.
  6. Lay out 5 pieces of deli ham and evenly divide the scrambled eggs between them, adding the eggs just off-center. Top each with salsa.
  7. Tuck the short side of the ham over the eggs and roll it up like an enchilada.
  8. Add the ham roll-up to a lightly greased baking pan, seam side down. Repeat until all 5 ham roll-ups are on the pan.
  9. Sprinkle remaining ½ cup shredded cheddar cheese over the ham roll-ups.
  10. Put the baking sheet in the oven on the top rack and bake for 3-5 minutes, until the cheese has melted.
  11. Remove from oven and dig in!

Notes

  • For best texture, use softly scrambled eggs before baking as they continue cooking in the oven.
  • Customize fillings by adding cooked bacon, sausage, or vegetables like spinach or mushrooms.
  • Use cooking spray or parchment paper on the baking pan to prevent sticking of roll-ups.
