Description

Salsa Taquera combines ripe plum tomatoes, white onion, and garlic cooked together with dried arbol chiles in neutral cooking oil to soften the vegetables and deepen flavors. After cooking, the ingredients are blended with more cooking oil until smooth and shiny, creating a thick salsa with a rich texture. The arbol chiles add a noticeable but balanced spiciness typical of Mexican taco salsas.

The salsa’s freshness and heat pair well with tacos, grilled meats, or as a condiment for various Mexican dishes. The use of neutral oil allows the flavors of the chile and vegetables to remain prominent without additional oil flavor.

For best results, use dried arbol chiles available at supermarkets carrying Mexican dried peppers. Adjust salt after blending to taste.

Ingredients

  • 2 plum tomatoes
  • 1 white onion
  • 3 cloves garlic
  • 6 arbol chiles dried, pepper
  • 6 tablespoon neutral cooking oil generic cooking oil
  • .5 teaspoon salt + salt to taste as needed

Instructions

  1. Roughly chop the tomatoes and onion. Peel the garlic cloves. Remove the stems from the árbol peppers.
  2. Preheat a pan with 2 tablespoons cooking oil to medium hot. Add the chopped tomatoes and onions and cook for 5 minutes stirring occasionally.
  3. Add the garlic to the pan and cook for 2 minutes stirring occasionally.
  4. Add the árbol peppers on cook for 1 minute more.
  5. Blend all of the salsa ingredients for 30 seconds. While the salsa is still blending add 4 tablespoons of cooking oil and blend for 1 more minute until the salsa is smooth, shiny, and thick.
  6. Taste and add salt if needed.

Notes

  • Use dried arbol chiles found at specialty or well-stocked supermarkets for authentic flavor.
  • Adjust the salt after blending to achieve the desired seasoning level.
  • This salsa pairs well with tacos and grilled dishes for a spicy, flavorful accompaniment.
