Description

This granola recipe begins by simmering maple syrup and ghee over medium heat until they create a thick caramel with a rolling boil and reduction over about 20 minutes. Salt is whisked in at the end to achieve a salted caramel flavor. While the caramel reduces, peeled and diced apple pieces are combined with rolled oats and cinnamon in a bowl. The warm caramel mixture is then drizzled over the oat and apple mixture and stirred well to coat everything evenly.

The granola is spread in a thin layer on a parchment-lined baking sheet and baked at 325°F until crisp and golden.   • 1 cup maple syrup
  • 1/4 cup ghee
  • 1 tsp salt
  • 3.5 cups rolled oats
  • 2 tsp cinnamon
  • 1 apple medium

Instructions

  1. Add maple syrup and ghee to a sauce pan over medium heat
  2. Whisk the ghee into the maple syrup as it melts
  3. Once the ghee is fully melted increase the heat to medium-high
  4. Allow the mixture to come to a rolling boil - watch closely so that it does not boil over
  5. Whisk and reduce the heat to medium-low
  6. Simmer on medium-low whisking frequently for 20 minute - the mixture should reduce to a thicker syrup
  7. While that reduces peel apple and slice into small pieces
  8. Preheat the oven to 325F and line a baking sheet with parchment paper
  9. Combine rolled oats, cinnamon and apple pieces in a large mixing bowl
  10. Once the caramel syrup has simmered for 20 minutes remove from the heat and immediately whisk in the salt
  11. Allow that mixture to cool slightly and then pour over the oats and apple
  12. Mix thoroughly with a flat spatula so all oats and apple pieces are evenly coated in the salted caramel mixture
  13. Spread the mixture onto the baking sheet in an even layer - you want all of the oats to be touching each other as they cook so that you can break into crumbles after
  14. Bake at 325F for 30 minutes
  15. Allow the granola to cool completely before crumbling
  16. Store in an airtight in container on the counter for up to 5 days or longer in the refrigerator
