Salted Maple Pecan Pie Energy Bites

Salted Maple Pecan Pie Energy Bites combine raw pecans, Medjool dates, maple syrup, oats, vanilla, cinnamon, and salt into small no-bake balls. These bites offer a chewy texture with a balance of nutty, sweet, and slightly salty flavors. They store well refrigerated or frozen and make convenient portable snacks.

Description

This recipe turns pecans, sweet Medjool dates, and rolled oats into compact energy bites flavored with pure maple syrup, vanilla extract, ground cinnamon, and kosher salt. Pulsing these ingredients in a food processor until sticky forms a mixture easy to roll into one-tablespoon balls. The flaky sea salt sprinkled on top offers a bright contrast that enhances the maple and nut flavors reminiscent of pecan pie.

The bites have a chewy consistency from the dates and oats, combined with crunch from the pecans. They make a handy snack that requires no baking or cooking. The recipe's simplicity relies on natural ingredients to provide sustained energy and a slice of sweet and salty flavor.

Storing the energy bites in the refrigerator keeps them fresh for about a week, or freezing extends shelf life up to three months. They are enjoyable even straight from the freezer. The ratio of sweetener can be adjusted slightly to taste, but the balance here is well considered for a wholesome snack.

Ingredients

Servings
  • 1 cup pecans raw
  • 1 cup date pitted, soft, large Medjool, about 10 to 12
  • 2 to 3 tablespoons pure maple syrup
  • ½ cup rolled oats gluten-free if desired
  • ½ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • sea salt flaky, for sprinkling on top

Instructions

  1. In the bowl of a food processor, add all the ingredients except the flakey sea salt for finishing. Pulse until ingredients are well combined and sticky. You may need to scrape down the sides a few times with a spatula, then process again. The mixture may seem crumbly at first, but see if you can squeeze a little bit between your fingers and if it sticks, you should be able to form it into balls.
  2. Use your hands to roll 1 tablespoon balls of dough. Sprinkle each energy bite with a little flaky sea salt. Place in a reusable silcone ziptop bag and store in the fridge for 1 week, or in the freezer for up to 3 months. They’re actually delicious straight out of the freezer!

Notes

  • Store energy bites refrigerated for up to one week to maintain freshness.
  • For longer storage, freeze bites in a reusable silicone zip-top bag for up to three months.
  • They can be eaten directly from the freezer when a cold snack is desired.
